Rapid Ravioli
8 ounces ricotta
1/4 cup basil
1/4 cup parsley
1/4 cup oregano
1/4 olive oil
salt and pepper
Wonton skins
Mix together everything but the wonton skins. Place a teaspoon of the ricotta mix into the middle of the wonton skin. Dab some water on two edges of the wonton and fold the wonton diagonally over the filling, pressing to seal.
Boil in water for about 3 minutes. Top with a swirl of olive oil, basil and Parmesan cheese. Makes 30.
