Greetings. Nestle makes a candy bar called Chunky. It is a thick hunk of chocolate with raisins and peanuts. A search on Wikipedia lets me know that it was introduced in the 1930’s and originally contained cashews and Brazil nuts. In this version of oatmeal cookies, I like to use pecans. If you don’t like raisins mixed with your chocolate, omit them and the cinnamon, and perhaps increase the amount of chocolate chips to 1½ cups.
‘Chunky’ Oatmeal Cookies
1 cup butter, divided
4 cups rolled oats
2 cups flour
½ teaspoon salt
½ teaspoon baking soda
2 teaspoons cinnamon, optional
1 egg
¾ cup honey or maple syrup
¾ cup brown sugar
1 tablespoon vanilla
1 cup chopped pecans
1 cup chocolate chips
1 cups raisins, optional
Preheat oven to 350 degrees F. Prepare baking sheets with parchment, or by coating lightly with a cooking spray.
In a large skillet, melt butter. Pour ½ cup of butter into a medium mixing bowl and set aside. Add oats to skillet, and sauté in the butter over medium heat until they just begin to brown. Set aside.
In a large mixing bowl, combine flour salt, baking soda, and cinnamon.
To the melted butter, add egg, honey, brown sugar and vanilla. Mix until thoroughly combined.
Add butter mixture to the flour mixture. Stir gently until not quite combined. Add oats, pecans, chocolate chips, and raisins.
Drop batter by rounded tablespoons onto cookie sheets. Bake for 10 – 15 minutes, depending on your preference for a chewy or well-done cookie. Makes about 4 dozen.
